Tucked into 2915 Union Road in Paso Robles, the Yes Cocktail Co. tasting room and bottle shop is equal parts education, entertainment, and really good drinks. Founded by Lauren Butler and Brandon Alpert — two theater kids turned cocktail obsessives — the whole place runs on the same energy as their background: interactive, warm, and impossible not to enjoy.

The Cocktail or Mocktail Flight
Perfect for a first time visit visit. Four sips, season-perfect cocktails, and a lineup designed to hit every palate. The flight gives you a tasting tour through Yes Cocktail Co.’s product range — mixers, syrups, bitters — so you can figure out what you love before you start filling your bag at the bottle shop. Mocktail versions are always available, so nobody gets left out.
The Hands-On Mixology Experience
Each guest gets everything they need for a hands-on experience: two premium spirits, four artisanal mixers and syrups, fresh citrus, ice, bitters, and all the bar tools to go with it. You’re not just watching a demonstration — you’re behind the bar, shaking and tasting your way through variations until you land on something you’d actually order twice. The interactive tasting experience runs 45 minutes.
Mixology Classes
Total newbie or cocktail nerd, the classes are hands-on and built for both. Groups of 2 to 30 guests are welcome, making them a go-to for date nights, birthday parties, and corporate events that people will actually remember. The YCC School of Mixology offers a full range of formats, including Mixology 101, Seasonal Sips workshops, Tiki Time classes, and private mixology parties.
Private Events
Yes Cocktail Co. handles the whole spectrum. Planning a bachelorette party? They’ll shake things up with a private mixology experience designed around your group, covering bar fundamentals while working through a cocktail menu inspired by the occasion. Getting married? You can meet with the team to plan your wedding cocktail menu, getting hands-on behind the bar to craft and sample your selections before the big day.
The Bottle Shop
Before you leave, browse the shelves. The product range includes all-natural mixers, syrups, bitters cubes, and zero-proof spirits — all made in-house from real fruit and botanicals. Standouts include the award-winning Cucumber Jalapeño Mixer, Charred Oak & Maple Syrup, Prickly Pear Syrup, and the Meyer Lemon Bitters Cubes. Yes Cocktail Co. also launched Amarø, a non-alcoholic Italian aperitif alternative, marking its debut as Paso Robles’ first nonalcoholic distillery.

The tasting room is located at 2915 Union Road, Paso Robles, CA. Current hours are Monday through Thursday noon to 4 p.m., Friday 11 a.m. to 5 p.m., Saturday 2 to 5 p.m., and Sunday 11 a.m. to 5 p.m. Classes book up, so reserve in advance — especially for groups.
